Honestly Joey's Kitchen was one of my favorite highlights during my recent trip to Maui. It's a great, no-frills Hawaiian and Filipino spot in the food court area at Whaler's Village that is a warm-welcomed escape from the sit-down and touristy price-inflated restaurants. Plus it's indoors with air-conditioning but also has outdoor seats too.
